José Andrés: The Man Who Created An Army Of Culinary First Responders
Nasi brongkos refers to a meal of steamed white rice served with a coconut-milk-based stew made with diced meat , hard-boiled egg, tofu, beans, and chayote. What makes it special is the stew which is made with a wide range of spices. Gado-gado refers to an Indonesian salad made with slightly boiled, blanched, or steamed greens served with a peanut sauce dressing. It’s name actually means “mix-mix†and is in reference to the host of ingredients used to make it like hard-boiled eggs, potatoes, bean sprouts, tofu, tempeh, and krupuk. Aside from the basic elements, nasi goreng could be made with a number of different elements like meat, seafood, egg, vegetables, and krupuk . Pictured beneath is the scrumptious nasi goreng kambing we enjoyed at the legendary Kebon Sirih stall in Jakarta.
